Armenian Eggplant Casserole

Title: Armenian Eggplant Casserole

1 ea Eggplant, lg 4 ea Tomatoes
1 ea Green pepper, diced 1/4 c Olive oil
1/2 ea Clove garlic, finely minced 1 x Pepper, freshly ground
1 ea Onion, med, sliced 1 1/2 t Salt
1 x Sour cream (optional sauce)
Pare and dice eggplant. Heat oil in skillet, add onion, green pepper, and
eggplant. Stir over low heat until eggplant is soft. Add tomatoes (may
substitute canned Italian solid pear shape, drained), salt, and pepper.
Simmer a few minutes. At this point you can add basil, chives, parsley,
tarragon or oregano to taste. Turn into casserole dish and bake at 325
degrees for 40 minutes. Casserole may be served hot or cols, with sour
cream.

Bahan-Bahan:
1 cawan kacang dhal kuning - dorebus hingga kembang,
4 biji ubi kentang dipotong dadu - di masukkan ke dalam dhal yang separuh kembang hingga empok,
1 biji karot dipotong dadu,dan
1 sudu besar serbuk cili, dan
1 sudu kecil serbuk jintan manis, dan
½ sudu kecil kunyit,
1 sudu besar garam (seikut rasa.
bahan tomes hingga garing (gold brown)
7 ulas bawang puteh di cincang halus,
3 inci halia dicincang halus,
1 ulas besar bawang besar di potong dadu digoreng hingga sederhana dan dimasukkan kemudian,
1 sudu besar jintan manis
2 kuntum bunga lawang
1 inic kulit kayu manis
dan diteruskan goreng hingga bawang kekuningan.
Cara:
bahan-bahan A (kiri) direbus hingga empok kemudian dimasukkan bahan yang digoreng tadi dan masak lagi selama 5 minit untuk memesrakan semua bahan. Sekian
